Everybody knows Pollo Lucas. Right on the main street under a big palapa roof, Lucas has big rustic tables that give a barbeque-joint feel to the place. And of course, that’s what it is. Chickens are cooked on a big grill Sinaloa Style. That means marinated in lime, mild chile, maybe orange juice, maybe…? Who knows. The juicy, smoky, tangy birds are about as good as it gets (the chickens you get in Mexico are different too. They have more fat, a fuller flavor).
Lots of people order to-go. A whole chicken is chopped for you, and is served with tortillas, cabbage and some really hot salsa on the side. There are also refried beens and Mexican rice, if you want them. Yeah, you want them. A little girl may come by offering the mini-empanadas her mom makes, and of course you have the expected selection of sodas. But thats really the whole menu. Doing one thing just right is what Pollo Lucas is all about.
