As you might know, Colin’s Cantina is the cozy little bistro in Rocky Point’s Princesa de Peñasco Resort. Those staying at the Resort, or just lucky enough to have found their way to the restaurant, are treated to some great food. Order a taco basket. Colin´s offers carne asada, crunchy fried sriracha shrimp, and even stingray tacos. Or how about a some bacon wrapped onion rings? You will also find mountainous nachos, great burgers, shrimp cocktails, and more. And we haven´t even had breakfast yet!
Open at 8am every day but Tuesday, Colin’s Cantina shines at breakfast. Hungry? Try the Chilequilles Omelete. Or there´s the Mama´s Bacon Blue Pancakes, full of blueberries and bits of bacon. Colin’s likes to come up with creative recipes, and put them on the menu.
Right now, for a limited time, Colin’s has something special. Cinnamon Roll Pecan Pancakes are a great tasting wake up call. Drizzled with sugar icing and nuts, these pancakes are just like eating a big, fluffy, cinnamon roll. Yum! You will find these available now through the end of January, when our chef brings out something new and exciting to take their place.

Colin’s works with the Mexico Children’s Foundation to make this happen. This organization has a presence in a number of communities in Mexico. This breakfast for kids program is currently only happening in Rocky Point. Mexico Children’s Foundation has reached out to the local government to make this a reality.
The prime mission of the Foundation has been to assist in getting medical treatment to local kids in need. A lot of times, that means paying for prescriptions, or medical procedures. Sometimes, it is for tests, or even transportation costs to see a specialist.
Children are referred to the Mexico Children’s Foundation for their case to be evaluated. One of the most recent is Emily. Four year old Emily has Down’s Syndrome. She was referred to the Foundation because her doctor wanted to run a CAT scan. With no CAT scan machine available in Puerto Peñasco, the Foundation helped pay for the test in Caborca. Two year old Jesus Miguel is another child who recently was helped. Having digestive issues, Jesus was able to receive needed medication and blood tests with the assistance of the Mexico Children’s Foundation.
So grab some breakfast at Colin’s Cantina before hitting the beach. Located at the entrance to the Princesa de Peñasco Resort, Colin’s is open to the public from 8am to 10pm, everyday except Tuesday.
